INGREDIENTS
For Yellow Turmeric Paste
15g Yellow Turmeric
15g Red Chili
15g Parsley
15g Garlic
15g Dried Shallot
10g Lemongrass
10g Dried Shrimp
15g Onion
10g Fish Sauce
3g Sugar
3g Chicken Powder
For Fish
200g Kühlbarra Barramundi Fillet
A pinch Cornstarch
50g Turmeric Paste
METHOD
For Yellow Turmeric Paste
1. Use a food processor to mince and mix the turmeric, red chilli, parsley, garlic, dried shallot, lemongrass, dried shrimp and onion.
2. Fry the turmeric paste until fragrant and add in the chicken powder, fish sauce and sugar before setting it aside.
For Fish
1. Cut the fish into two 100g portions.
2. Coat the fish in a thin layer of cornstarch, then some turmeric paste, before grilling it for about 6 minutes and serving.
